Eggless Waffles

Remember my post on waffles? Well, there was a time when I craved for waffles and found out we were out of eggs. I quickly googled for an eggless recipe and got this.
Combine the following in a bowl:
- 2 cups flour
- 4 tsp baking powder
- 2 tsp sugar
In a separate bowl, combine these:
- 2 cups milk
- 2 tbsp vegetable oil (I used melted ghee)
- 2 tbsp water
- 1 tsp vanilla
- 4 tbsp (56.7g) melted butter
- Add the wet ingredients to the dry ingredients, and mix together gently. As with all pancake batters, it should be slightly lumpy.
- Let the batter sit for a few minutes to give it time to puff up.
- Once your waffle maker is ready to go, depending on the size of your maker, scoop the batter in and enjoy!

I’ve made these several times and there was a time I didn’t have enough milk and I didn’t bother topping up with water; so the batter was not as runny. It was easier to scoop onto the waffle maker and the result was just as good and perhaps crunchier.
